Most of my early life I had read this passage of Scripture, and to be honest, never understood it. The harvests around me were not white. They were yellow and gold and even green. It wasn't until I moved west and was surrounded by cotton fields that I understood. When the cotton is ready to be picked, the boles have opened showing their white, fuzzy substance and have even dried up and fallen off; the leaves have browned and fallen off, and all that is left is the stem, now brown, and the white, puffy cotton. Indeed, the "fields are white unto harvest!" In this particular field, the farmer chooses to not artificially defoliate his crop, so the browned leaves hang on 'til the bitter end. This makes for a harvest that is a bit more trashy, but saves him the cost of defoliation.
